“Here at the Marina Village we love to cook! We use as many fresh, raw ingredients as possible (available) in our recipes to make everything from scratch. All of our restaurants, including our sports bar/restaurant, the Hook Up, make their own breads, stocks, pastas, soups, sauces, desserts and over 40 dips and dressings here on the premises.
Using and teaching different cooking techniques that are new to the area (such as bread fermentation and aging meats) are examples of artisanal or old school methods of cooking. At the same time though, we make huge efforts to keep up with what is “HOT” in the culinary world today.

Behind the Scenes
Food & Beverage Director
Darrell Thomas, the Director of Food and Beverage Operations and Executive Chef, oversees all operations of the Los Sueños dining establishments: El Galeón, The Hook Up Restaurant and Bar, Lanterna Ristorante Italiano, Bambu Sushi and Asian Cuisine, the Terrace Lounge, Dolce Vita Coffee and Sweets, and Under8teen's family activity center. He manages all the restaurant staff (approximately 150), creates the restaurant and beverage menus and handles all sizes of catered events. Mr. Thomas joined Los Sueños in 2003. Prior to his arrival at Los Sueños he worked in his home country of Canada, as well as in Switzerland, St. Martin and Indonesia, among others. He is multi-lingual and has traveled extensively, visiting over 30 countries. Mr. Thomas has thirty seven years' experience in the restaurant industry, backed by two years of Business College and training as a fine dining chef.
George Sidaros, the Operations Manager for all restaurants at the Los Sueños Marina Village, ensures the daily operations and production comply with company standards. He uses his global experience to enhance our customers' satisfaction. His extensive culinary expertise is evidenced in menu planning for events and the updating of daily menus. Mr. Sidaros graduated from The French Culinary School and is a Certified Executive Chef from the American Culinary Federation USA; he is also a Certified Teacher's Instructor in General Hotel Trade from Munich, Germany. He joined Los Sueños in 2014. Prior to his arrival to Los Sueños he held several positions at five star hotels and food service companies, as well as culinary schools in Germany, Egypt, Colombia, Venezuela and the USA. Mr. Sidaros is a native of the Mediterranean, born in Alexandria, Egypt, with Greek and Italian ancestry. He has resided in Costa Rica since 2011.
